    Ingredients

    2 pieces of Chinese tofu, cut into squares, briefly fried

    200 grams of egg white

    2 tablespoons of oil for sauteing

    1 bay leaf 2 cm galangal, bruised

    2 red chilies, cut into 1 cm each

    2 red chilies, sliced

    2 tablespoons of soy sauce

    1 teaspoon soy sauce

    1/2 teaspoon salt

    1/2 teaspoon brown sugar

    1/4 teaspoon ground pepper

    150 ml of water

    Ingredients to chop:

    5 shallots

    2 cloves of garlic


    Cooking Steps

    1. Pour the egg whites into a 12x7x4cm square pan. Steam over medium heat until cooked. Cut the egg white into squares. Set it aside.
