    The newly-appointed Executive Chef of JW Marriott Jakarta, Chef Martin Weise, talks about his 15 years experience of culinary journey and his favorite Indonesian food.  

    Kitchenesia.com - Five-star hotel JW Marriott Jakarta has recently appointed Martin Weise as the new Executive Chef. Known for haute cuisine, Chef Martin will lead the talented and skillful culinary team of JW Marriott Jakarta and add new twists and surprises to provide the finest in gastronomy for all guests.

    Before venturing his new career in Jakarta, the Germany-origin chef has worked in many award-winning establishments to large banqueting events in several five-star hotels.  His strong culinary career began at Sheraton Grand Sydney Hyde Park as the Acting Executive Chef and Executive Sous Chef.

    Following a move to Savoy Hotel London the Chef de Cuisine for Thames Foyer and banqueting, he also worked at The Westin Sydney and Hotel Adlon Kempinski Berlin, continued by a cruise ship Sea Cloud II sailing across Mediterranean and Caribbean Sea and many more after those.

    Bringing over his 15 years of culinary experience, Chef Martin will oversee JW Marriott’s entire kitchen and banquet operations including 5 food & beverages outlets as well as banqueting.

    When media asked about his inspiration to his culinary innovation, Chef Martin humbly told us about his hobby in traveling that makes him never running out of ideas.

    “Travelling throughout the world, creating exciting food through learning different cultures,different cooking methods, discovering new and exotic spices are what excite me”, said Martin Weise on press conference on Tuesday, October 8.

     “For I believe that experiencing the world not only enriches your skills in whatever you do, but also gives you new colors to throw on the table, which in my case, quite literally”, adds Chef Martin.

    His culinary expertise made many important people trust him in preparing their food. To name a few, Chaf Martin led a diplomatic dinner for Charles, Prince of Wales; Prince Al-Waleed of Saudi Arabia, and Barack Obama. He also gain trust by some pop culture icons: J.K. Rowling, Nicki Minaj, Eminem, and many more.

    When media asked about a fact of his life that most people don’t know, Chef Martin told media that he starred as an actor in a blockbuster movie. He contributed as a cameo in Liam Neeson’s Unknown in 2011. At that time, he was a Junior Sous Chef at Adlon Kempinsky Berlin, a place where the movie shot.

    Oxtail Soup Enthusiast

    His love for Indonesian food began when his Indonesian colleague introduced him to rendang. After that, Indonesian food piqued his interest to the point he started practicing Indonesian food recipes. “I really love food with rich herbs and spices. And Indonesia cuisine is one of them,” said Chef Martin on press conference at JW Marriot Jakarta.

    He named oxtail soup, meatballs soup, and rendang as his favorite food for one obvious reason: those dishes are rich in spices. “I like oxtail soup, meatballs soup, and rendang. I always go to Soup Station (at JW Marriot Jakarta) in the evening. I really love soup!”

    Chef Martin promised to develop a range of innovative culinary concept combining German cuisine with Indonesian. His first step is to create German cuisine in Indonesian style. “Both (German and Indonesian cuisine) are very unique but also different to each other. I’ll try my best to combine them into a perfect delicacies that elevated every guest culinary experiences,” said Chef Martin in his closing statement.
