    It contains meaty oncom (fermented by-product of soybean) and aromatic herbs like lemon basil and aromatic ginger. When combined, this breakfast becomes a tasty vegetarian-friendly dish that exudes aromatic fragrant.

    Ingredients

    400 grams (2 plates) of steamed rice
    200 grams oncom, burnt for a while then chopped*
    1 pod of bitter bean
    8 lemon basil stalks, keep the leaves
    1 1/4 teaspoons salt
    1/8 teaspoon white pepper powder
    1 vegetable oil

    For ground seasoning:
    3 big red chillies, discard the seeds
    6 shallots
    2 garlic cloves
    2 curly red chillies
    10 cm piece of aromatic ginger


    Cooking Steps

    1. Place all ground seasoning ingredients in pestle. Grind using mortar until making a fine, paste sambal.

    2. Heat oil over medium-flame wok. Add ground sambal and stir constantly until fragrant. Add bitter beans and stir until half-wilted. Add oncom while stirring constantly.

    3. Add rice to the pan and stir constantly using wooden turner. Add salt, white pepper powder, and lemon basil leaves. Stir thoroughly until the combined well.

    4. Serve Nasi Goreng Kencur Oncom (fried rice with aromatic ginger and fermented soybean) as breakfast.
