    Tantalising Nasi Bakar Bandeng Pedas - This one exceptional dish of Nasi Bakar Bandeng Pedas (Roasted Rice with Spicy Pressure Cooked Milkfish Filling) will diminish your growling stomach with its savory spicy and tender meat of pressure cooked milkfish combined. Its aromatic harm only adds delicacy to its already irresistible flair. Just putting on some effort won't hurt the result.

    Duration : 60 minutes
    Yields     : 5 servings


    300 grams of rice, wash thoroughly
    1 bay leaf
    1 lemongrass stalk, flattened
    1 teaspoon of salt
    500 ml coconut milk from 1/2 coconut

    Ingredients for milkfish:
    2 pieces of pressure cooked milkfish, fried, roughly chopped
    7 basil stalks, use the leaves
    5 whole cayenne peppers
    50 ml of mineral water
    5 pieces of banana leaf for wrapping

    Ingredients to grind at once (spices):
    8 onions, roasted
    4 cloves garlic
    4 large red chilies, roasted
    4 curly red chilies, chopped evenly
    4 red chilies, sliced evenly
    2 tablespoons of oil for sauteing

    Cooking Steps

    1. Rice dough steps: boil coconut milk, salt, bay leaves, and lemongrass while stirring until the mixture boils. Add rice. Stir until absorbed. Stir evenly. Steam over medium heat for 40 minutes until it is cooked. Lift it up and set it aside for awhile.

    2. Stir fried milkfish steps: heat the oil. Stir-fry the spices until fragrant. Add water. Stir evenly. Add fish. Stir evenly. 

    3. Take a banana leaf. Spoon a little stir-fried cayenne pepper, and basil leaves. Cover it with rice. Wrap it tightly. Pin both ends with a stick.

    4. Roast until it is thoroughly cooked with aromatic smell.
