200 grams fresh yellow egg noodles
200 grams medium shrimp, deveined and tail-on
5 fish meatballs, sliced
2 garlic cloves, minced
3 stalks of choy sum, chopped
50 grams straw mushroom, halved
100 grams cabbage, shredded
1 teaspoon oyster sauce
2 tablespoons sweet soy sauce
3/4 teaspoon salt
1/4 teaspoon white pepper powder
50 ml water
1 stalk of leek, chopped
1 teaspoon sesame oil
2 tablespoon cooking oil
1. Heat oil on a wok over medium-low heat. Add garlic to the wok and fry until aromatic. Add shrimp and meatballs. Stir-fry until the meats are half-way cooked (golden brown)
2. Add cabbage, choy sum, and straw mushrooms to the wok, then stir-fry until they are half-withered. The shrimp and fish meatballs should be fully cooked at this point as well.
3. Add egg noodles, oyster sauce, and sweet soy sauce. Give the noodle a quick stir, then add salt and white pepper powder. Stir-fry the noodles constantly to distribute the sauce evenly.
4. Add water then stir to combine the ingredients well.
5. When the noodle just about to serve, add leek and sesame oil. Stir well.
6. Serve Stir-Fry Noodles as a lunch dish.
