7 boiled chicken liver and gizzard, chopped
3 garlic cloves, minced
7 shallots, minced
3 big red chillies, bias sliced
2 green chillies, bias sliced
5 cayenne peppers, chopped
1 bayleaf
1 galangal, crushed
3/4 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon sugar
100 ml water
1 celery, chopped
1 teaspoon oil
1. Heat half of the oil in a large, non-stick frying pan. Add garlic, shallot, all chillies, bayleaf, and galangal altogether. Stir until fragrant.
2. Add chicken liver and glizzard. Stir well.
3. Add salt, white pepper, and sugar. Stir well.
4. Add selery. Pour water into the pan and stir well bring to simmer.
5. Serve sautéed chicken liver and gizzard alongside steamed rice.
