Lemper with Chicken Opor Filling, Fulfilling Snack For Light Lunch

    Kitchenesia.com - We've all been through those times when sudden hunger-attacks were hitting but we didn't have any choice but plain and boring instant munchies. But say no more to boring food because today's recipe is about fun and full-flavored snack

    Lemper is a famous snack sold in traditional morning market. People mostly eat it as a quick breakfast, some enjoy it with evening tea. The "sticky rice sandwich" is commonly stuffed with spicy chicken or beef floss. 

    Kitchenesia's recipe is never conventional. Thus, we alter the recipe a little bit and making opor ayam (chicken curry stew) as the filling. If there's a leftover chicken opor stew in kitchen, it's even better. You can skip the filling part and right into making the lemper only. 

    If there's any, you can make lemper with chicken opor filling from scratch by following the recipe below. 

    Duration: 90 minutes

    Yields: 16 pieces


    400 grams sticky rice

    200 ml coconut milk

    1 sheet of pandan leaf

    3/4 teaspoon salt

    For chicken opor filling:

    2 chicken thighs, boiled then shredded

    1 sachet of instant opor seasoning

    2 curly red chilli, chopped

    2 cm piece of galangal, crushed

    100 ml of coconut milk

    Cooking Steps

    For sticky rice outer:

    1. Soak sticky rice in a bowl of room-temperature water. Drain after one hour soaking. 

    2. While soaking, pour coconut oil and pandan leaves on a pot and put them into boil. Stir constantly until it is boiled. 

    3. Prepare a steamer over a medium fire. Put sticky rice in a steamed-proof bowl and leave it for 20 minutes or until it rises. Remove the bowl from steamer. 

    4. Pour boiled coconut oil to the bowl of sticky rice. Leave it for a while. 

    For chicken opor filling:

    1. Heat oil on a medium-fire pan. Add opor seasoning, red chilli, and galangal and stir constantly. Once it is fragrant, add shredded chicken and stir well until combined. 

    2. Pour coconut milk to the pan. Stir well until dried and absorbed. Turn off the stove and let it chill. 

    How to assemble them:

    1. Prepare a medium-sized baking sheet and put parchment paper on it as a base.

    2. Pour half amount of sticky rice to the baking sheet. Add chicken opor filling and add the rest of sticky rice on top of the filling. 

    3. Steam for 25 minutes. Remove from the steamer when it has risen. 

    4. Cut lemper into dice and cover them with banana leaves.

    5. Serve Lemper with Chicken Opor Filling as a snack.
