Sautéed Water Spinach with Papaya Flower is a flavorful and fulfilling dish to accompany plant-based diet!

Kitchenesia.com - In less than a month, many spices and vegetables' prices are soaring because people do stockpilling amidst of COVID-19 outbreak. The hoarding makes some of the spices, vegetables, and fruits short in stock yet the demand is still high, making their prices soar uncontrollably.
For example, just exactly two weeks ago, ginger used to be sold at IDR 50,000 (USD 3.5) per kilogram. But the price soars significantly to IDR 100,000 (USD 7), making it more expensive than beef.
There are vegetables whose prices are constant; some of which are water spinach and papaya flower. They are less desirable than ginger and other spices for their nutrients are not that well-known.
In fact, water spinach is a powerhouse of vitamin A, which is important for vision organ and immune system. The same goes to papaya flower who is rich in vitamin, in addition to antioxidants.
Combine both of them and you will have a tasteful dish that can strengthen and benefit your body!

Yields: 5 plates
Ingredients:
100 grams papaya flower
3 bundles of water spinach, discard the stalks
2 lemongrasses, crushed
100 gram smoked skipjack tuna, shredded
5 kaffir lime leaves
2 bundles of basil leaves, discard the stalks
1 teaspoon salt
1 teaspoon sugar
100 ml water
1 tablespoon cooking oil.
Spice Paste Ingredients:
8 shallots
4 red chillis
1 centimeter piece of turmeric, roasted.
Grind all paste ingredients together until soft
1. Prepare a bowl to cleanse the papaya flowers. Add papaya flowers into the bowl. Add a pinch of salt on it. Squeeze well and drain. Repeat this step two times.
2. Prepare a pan to boil the papaya flowers. Boil the cleaned papaya flowers with medium heat fire. Repeat this step on a different pan.
3. Heat cooking oil over a medium heat. Sauté ground paste until fragrant.
4. Add lemongrass. Stir until fragrant. Add shredded skipjack. Stir well.
5. Add papaya flowers, water spinach, kaffir lime leaves, and basil leaves. Stir until half withered.
6. Add salt and sugar and stir well. Pour water to the pan. Stir until well-withered.
7. Serve sautéed water spinach with papaya flower with steamed rice.
Tips: remove skipjack tuna if you are in plant-based diet. Its taste is not affected.
