Rendang, which is popular for its insane amount of flavors, now can be cooked together with an array of meat types. Kitchenesia's todays recipe is Squid with Rendang Sauce, that we guarantee to have the same taste as the beef rendang but when it comes to cost, it is more economical.
500 grams squid, cleaned,
3 lime leaves,
2 lemongrass, finely sliced
1 asam kandis (can be substituted with ¾ glass tamarind juice)
1 turmeric leaf, sliced
2 cm galangal
1/2 tablespoon salt
500 ml coconut milk
Rendang Sauce Ingredients (mix and grind altogether):
8 curly red chili peppers
4 large red chili peppers
8 cloves shallot
3 cloves garlic
1 cm ginger
4 candlenuts ginger
1/2 teaspoon pepper
1 teaspoon coriander seeds
1. Boil coconut milk, spices, lime leaves, lemon grass, asam kandis, turmeric leaf, galangal, salt and coconut milk until thick and reduced.
2. Add squid. Stir well. Cook until the squid is softened and the thick sauce is infued to the squid. Remove from heat.
3. Squid with Rendang Sauce is ready to serve.
