10 chicken wings
2 lemongrasses, crushed
2 galangals, crushed
2 bayleaves
150 ml coconut milk
2 tablespoons tamarind water extract
5 tablespoons sweet soy sauce
2 teaspoons brown sugar
1 teaspoon salt
3 tablespoons frying oil
Ingredients to grind altogether:
8 shallots
2 cloves garlic
1 tablespoon coriander
1/4 teaspoon cumin
3 candlenuts
1. Stir-fry ground paste, lemongrass, galangal, and bayleaves until fragrant in a medium heat oil.
2. Add chicken wings into the pan. Stir until blended. Pour coconut milk, tamarind water, sweet soy sauce, brown sugar, and salt. Stir until the ingredients dried.
3. Season chicken with excessed seasoning. Grill them with charchoal until well-brown.
