1 bunch (240 grams) of water spinach, plucked
2 garlic cloves, minced
2 shallots, minced
2 green chilies, julienned
2 tbsp taoco (fermented yellow soybean paste)
1/4 tsp sugar
50 grams anchovy, fried
1 tbsp cooking oil
1. Heat oil in saucepan over medium heat. Once it simmers, add garlic, shallot, and green chilies to the pan and stir until fragrant. Add taoco paste, stir constantly until blended.
2. Add water spinach and stir until half-wilted. Add sugar and water, stir constantly. Once the spinach changes color and looks wilted, add anchovy. Remove from pan and place in a bowl.
