Yields: 3 servings
1 piece of boneless chicken thigh, chopped
5 choy sum stalks, chopped
5 meatballs, slivered
200 grams chow sum (flat and wide noodles)
2 chicken eggs, beaten
100 grams mungbean sprout
200 ml chicken broth
2 scallion stalks, cut on the bias
2 tablespoon vegetable oil
1 tablespoon fried shallots
4 garlic cloves, grind using mortar and pestle until making a paste
For sauce
1 tablespoon sweet soy sauce
1 teaspoon soy sauce
1 tablespoon oyster sauce
1 teaspoon sesame oil
1/2 teaspoon salt
1/8 teaspoon white pepper powder
1. Boil noodles in a pot and bring it to boil over medium flame for 4-5 minutes. Stir occasionally in between. When it is soft, transfer noodles to colander to drain excess water. Set aside.
2. Add sauce ingredients altogether to a small bowl. Mix them using fork until dissolved.
3. Heat vegetable oil in a fry-pan over medium flame. When the oil simmers, add garlic paste and stir until fragrant. Move aside sautéed garlic to the corner of the pan. Add beaten egg to the garlicky oil and mix egg with sautéed garlic. Stir well until combined.
4. Add chicken thighs and meatballs to the pan and stir well until combined. Add choy sum and mung bean sprout to the pan and stir constantly until the vegetables withered.
5. Add the noodles to the fry-pan and stir until blended. In between, pour chicken broth and scallion. Stir until the broth absorbed and drained and cook for 1-2 minutes.
6. Sprinkle fried shallots onto Stir-Fried Noodles with Vegetables. Divide between individual plates or bowls and serve immediately.
