    Prep time: 15 minutes

    Yields: 1 bowl

    Ingredients

    1 tomato, chopped

    2 tsp shrimp paste, burn briefly

    1 tsp salt

    2 tsp palm sugar

    2 bitter bean pods, halved

    3 tbsp cooking oil

    10 cayenne peppers

    5 red bird eye chilis

    4 shallots

    4 garlic cloves


    Cooking Steps

    1. Heat oil in pan over medium heat. When simmers, add cayenne peppers and bird eye chilies. Stir until half-wilted

    2. Add tomatoes while stirring. If both chillies and tomato has wilted, remove from pan.

    3. Place fried chillies on pestle. Add garlic and shallots on the sampe pestle and grind using mortar. When they are half-smooth, add sugar, shrimp paste, and salt. Grind well until making a fine, smooth paste.

    4. Add fried tomato to the pestle, grind briefly until blended. Add bitter bean and combine with sambal using spoon.

    5. Serve Sambal Goreng Petai (fried sambal with bitter bean) as a condiment in iftar dinner meal.
