    Duration: 45 minutes

    Yields: 4 servings

    Ingredients

    100 grams yardlong bean, chopped into 3-cm pieces then boiled

    1 bunch (15 grams) of water spinach, boiled

    2 carrots, julienned then boiled

    100 grams mung bean sprout, boiled

    100 grams grated coconut

    Grind altogether into a paste:

    4 shallots

    2 garlic cloves

    2 red chilli peppers

    2 cm piece of aromatic ginger

    1/2 teaspoon fried shrimp paste

    1 teaspoon palm sugar


    Cooking Steps

    1. Place all paste ingredients in pestle and grind into a fine paste. Put grated coconut in the pestle and mix them up until well-combined. 

    2. Heat wok over low heat without oil for a minute and place grated coconut in it. Stir constantly until drained and fragrant. Switch off the stove. 

    3. Still in the same wok, stir grated coconut frequently until it has cooled down. 

    4. Prepare a bowl and place all the vegetables in it. Pour grated coconut in the bowl and mix until all ingredients are well-combined. 

    5. Serve urap kelapa sangrai (vegetable salad with grated coconut) alongside steamed rice.
