Pekalonganese tauto (beef in soybean paste soup) is not a usual beef soup. it is spiced with fermented soy bean paste. it gives such unique flavor to the soup. the soup itself contains beef brisket, hard-boiled eggs, and paddy oat chips. the taste will even get better when served with its complements.
750 grams beef brisket
3,000 ml water
3 cm ginger,crushed
3 lemongrass (white parts only)
4 tablespoons sweet taoco(fermented soybean paste)
5 lime leaves, midribs removed
1 tablespoon sweet soy sauce
2 blocks beef bouillon powder
4 teaspoons salt
½ teaspoon white pepper powder
1 teaspoon sugar
2 tablespoons cooking oilfor sautéing
Ground Spices Blend:
10 cloves shallot
6 cloves garlic
2 cm turmeric,toasted
3 red chili peppers
Complements:
7 teaspoons crispy shallotfor topping
7 teaspoon celery,finely sliced for topping
fried paddy oat chips
6 hard-boiled eggs,halved
2 limes, finely sliced
- Bring water to boil. Add beef. Boil it until well done. Remove it from heat. Cut it into small pieces. Strain the broth.
- Bring broth to boil. Cook beef in its broth until tender.
- Heat cooking oil on the pan. Sauté ground spices blend, ginger, lemongrass, sweet taoco, and lime leaves until fragrant. Pour it into beef soup.
- Add sweet soy sauce, beef bouillon powder, salt, pepper, and sugar. Cook it until all ingredients are well-cooked. Remove it from heat.
