Krecek (beef skin) & black-eyed peas fried sambal is usually enjoyed with yogyakartanese gudeg. however, you don’t have to go to yogyakarta to enjoy this dish since you can make it at your home.
100 grams black-eyed peas,soaked in water for 2 hours, boiled until softened
100 grams beef skin crackers
2 salam (indonesian bay)leaves
1 lemongrass, crushed
2 cm galangal,crushed
6 red bird’s eye chili peppers
6 green bird’s eye chili peppers
1¾ teaspoons salt
2 teaspoons brown palm sugar
1,250 ml coconut milkfrom ¾ coconut
1 teaspoon tamarind juicefrom 1 teaspoon tamarind dissolved in 1 tablespoon hot water
2 tablespoons coconut oilfor sautéing
ground spices blend:
8 cloves shallot
3 cloves garlic
3 large red chili peppers
2 curly red chili peppers
1. Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, lemongrass, and galangal until fragrant. Add in green and red bird’s eye chili peppers. Stir it until softened.
2. Add in black-eyed peas, beef skin crackers, salt, and brown palm sugar. Stir it well.
3. Pour in coconut milk. Stir it well. Cook it until thickened. Keep stirring it. Right before removed from heat, add in tamarind juice. Stir it well. Remove it from heat.
