Sand Ginger Fried Rice
Ingredients
500 grams white rice
100 grams medium shrimppeeled
1 green chili pepper, sliced
2 eggs, beaten
1/2 tablespoon fish sauce
3/4 teaspoon salt
1/4 teaspoon white pepper powder
100 grams mung bean sprouts
50 grams teri nasi(indonesian small anchovies),
3 sprigs lemon basil leaves,chopped
3 tablespoons cooking oilfor sauteing
ground spices blend:
5 cloves shallot
3 cloves garlic
2 curly red chili peppers
3 cm sand ginger
1 teaspoon terasi(shrimp paste)
toppings:
100 grams fried cassava starch crackers
2 tablespoons crispy shallot
Cooking Steps
- Heat cooking oil on a the pan. Sauté ground spices and green chili pepper until fragrant. Set aside on the edge of the pan.
- Add eggs. Stir it until granuled.
- Add in peeled shrimp. Stir until the color changes.
- Add rice, fish sauce, salt, and pepper. Stir it until all ingredients are well-cooked.
- Add teri nasi, mung bean sprouts, and lemon basil. Stir well. Remove from heat.
- Sprinkle Sand Ginger Fried Rice with crackers and crispy shallot before serving.
