Fried Rice with Thai Herbs
Ingredients
4 cloves garlic,roughly chopped
2 dried chili peppers, finely chopped
1 cm ginger,crushed
1 tablespoon ebi (dried shrimp),soaked in hot water, crushed, roasted, ground
150 grams shrimp,peeled, leaving its tail on, deveined
100 grams champignon mushroom,halved
500 grams white rice
2 tablespoons fish sauce
1 teaspoon salt
1/2 teaspoon white pepper powder
3/4 teaspoon sugar
7 sprigs cilantro leaves,coarsely chopped
2 tablespoons margarinefor frying
1/2 teaspoon lemon juice
toppings:
omelette from 1 egg and 1/8 teaspoon salt, finely sliced
1 sprig cilantro
Cooking Steps
- Heat margarine on the pan. Sauté garlic, dried chili pepper, ginger, and ebi until fragrant.
- Add shrimps. Stir until the color changes.
- Add mushroom. Stir it until softened.
- Add rice. Stir well. Add fish sauce, salt, pepper, and sugar. Stir it until well-cooked.
- Add cilantro leaves and lemon juice. Stir well.
- Remove this Fried Rice with Thai Herbs from heat. Serve with sliced omelet and a sprinkle of cilantro leaves.
