Bored with your usual fried rice? spice it up with turmeric into this yellow fried rice!
Yellow Fried Rice
Ingredients
200 grams uncooked rice
300 ml water
25 grams turmeric,grated, squeezed into 20 ml liquid
3 cloves garlic,finely chopped
4 cloves shallot,finely chopped
2 large green chili pepper,seeded, diced
1 large red chili pepper,seeded, diced
100 grams chicken fillet,cubed
1 teaspoon light soy sauce
1/2 teaspoon fish sauce
1/2 teaspoon salt
1/2 teaspoon white pepper powder
1 scallion, sliced diagonally
1 tablespoon cooking oil
sliced omelette ingredients:
2 eggs
1/4 teaspoon salt
1/2 teaspoon celery,finely chopped
complements:
crispy shallot
cucumber, sliced
Cooking Steps
- Boil water and turmeric juice. Add in rice. Cook until absorbed.
- Steam it for 30 minutes over medium heat until cooked.
- Heat cooking oil on the pan. Sauté garlic and shallot until fragrant. Add in chicken. Stir until the color changes.
- Add red and green chili pepper. Stir well.
- Add rice, light soy sauce, salt, and pepper. Stir it until all ingredients are mixed. Add scallion. Stir well. Cook it until all ingredients are well cooked.
- Omelette: beat egg and salt. Add celery. Stir well. Cook the micture on the pan into thin omelettes. Roll it and slice it thinly. Sprinkle it with crispy shallot, cucumber, and sliced omelette.
- Serve this yellow fried rice with omelette.
