Mi Kocok Medan (Medanese Noodle Soup)
Ingredients
1 chicken breast fillet,braised, shredded
250 grams fresh yellow noodles,soaked in hot water, drained
150 grams mung bean sprouts,soaked in hot water, drained
200 grams shrimp,peeled
6 cloves shallot,fried, mashed
3 cloves garlic,fried, mashed
2 cm ginger,finely chopped
3 cloves
1/2 teaspoon nutmeg powder
1 tablespoon salt
1/2 teaspoon white pepper powder
2 1/2 tablespoons cornstarch,dissolved in 1 1/2 tablespoons water
1,250 ml shrimp broth
1 tablespoon cooking oil

3 eggs, hard-boiled, cut
5 teaspoons crispy shallot
2 lime
Cooking Steps
- Bring the mixture of shrimp broth, cloves, and nutmeg to boil.
- Heat cooking oil on the pan. Saute shallot, garlic, and ginger until fragrant. Add in shrimp. Stir until it changes color. Pour into the boiling broth.
- Add cornstarch mixture into broth. Stir until it is thickened. Remove from heat.
- Put noodles, bean sprouts, shredded chicken, and boiled eggs in a bowl. Drench it with sauce.
- Serve Mi Kocok Medan (Medanese Noodle Soup) with a sprinkle of crispy shallot and a squeeze of lime.
