    Ingredients

    300 grams round yellow noodles,boiled,
    6 (170 grams) cabbage leaf
    2 chives, cut into 2 cm pieces
    1,000 ml water

    sauce ingredients
    1,500 ml chicken stock
    60 grams brown sugar,chopped
    3 tablespoons sweet soy sauce
    4 teaspoon salt
    1/2 teaspoon seasoning
    7 tablespoons sago starch,dissolved in 8 tablespoons water
    1/2 tablespoon cooking oil

    ground spices blend for sauce
    4 cloves garlic
    1/4 teaspoon white pepper powder

    sweet satay ingredients
    200 grams beef tenderloin,cubed
    50 ml sweet soy sauce
    1 tablespoon cooking oil

    ground spices blend for satay
    4 cloves shallot
    2 cloves garlic
    1 cm galangal
    1/8 teaspoon cumin
    1/2 teaspoon salt
    1 teaspoon coriander seeds
    1/4 teaspoon white peppercorn
    30 grams brown sugar

    peanut sauce
    100 grams peanut,fried
    1 clove garlic,boiled
    1 curly red chili pepper,boiled
    2 red bird-eye chili peppers,boiled
    1/2 cm sand ginger
    1 tablespoon brown sugar
    350 ml water
    1 teaspoon sweet soy sauce
    1/2 teaspoon salt
    1 teaspoon tamarind juicefrom ½ teaspoon tamarind

    Cooking Steps

    1. Sweet satay: Mix beef tenderloin, ground spices blend, sweet soy sauce and cooking oil. Let it set for 1 hour in refrigerator. Skewer the beef. Grill beef over a grilling pan or charcoal grill until fragrant and glaze it with the remaining marinade sauce while grilling. Remove from heat. Set aside.
    2. Noodle sauce: Saute ground spices blend until fragrant. Add chicken stock, brown sugar, sweet soy sauce, salt and seasonings. Bring it to boil.  Thicken it with sago starch mixture. Cook it until bubbling. Remove it from heat and set it aside.
    3. Put noodle, shredded cabbage, and chives in a strainer. Dip it into boiling water until cooked. Remove from heat. Put it in a bowl. Set aside.
    4. Peanut sauce: Puree all peanut sauce ingredients except tamarind juice and water. Pour it into the pan. Add in water. Bring it to boil. Add tamarind juice. Stir well. Remove it from heat.
    5. Put boiled noodles, shredded cabbage, and chives in a bowl. Drench it with noodles sauce.
    6. Serve Ongklok noodles with sweet satay and peanut sauce.
