Mi Titi (Crispy Noodle with Thick Sauce)
Ingredients
300 grams dried small noodles,boiled, drained
2 limes, wedged for complement
3 tablespoons chili saucefor complement
vegetable oil for frying
1 pair chicken thigh and leg
2 beef meatballs,sliced
4 fried meatballs,sliced
150 grams choy sum,cut into pieces
4 cloves garlic,smashed
1 tablespoon oyster sauce
1 teaspoon light soy sauce
1/2 teaspoon chicken bouillon powder
1 teaspoon salt
1/2 teaspoon white pepper powder
1/2 teaspoon sugar
750 ml water
1 tablespoon sago starchdissolved in 1 tablespoon of water
1 egg, beaten
2 tablespoons cooking oilfor sautéing
Cooking Steps
- Boil chicken in 750 ml of water until cooked. Remove it from water. Dice it. Reduce the broth to 500 ml. Set aside.
- Put noodles on a strainer. Fry it over medium heat until dry. Remove from heat. Set aside.
- Heat vegetable oil on the pan. Sauté garlic until fragrant.
- Add chicken, beef meatballs, and fried meatballs. Stir well.
- Add oyster sauce, light soy sauce, chicken bouillon powder, salt, pepper, and sugar. Stir well.
- Pour in chicken broth. Bring it to boil. Add choy sum. Stir well.
- Thicken sauce with sago starch mixture. Stir it until bubbling.
- Pour in egg gradually. Stir it until eggs spreads into ribbons. Cook it until well done. Remove from heat.
- Put fried noodle on a bowl. Drench it with sauce.
- Serve Mi Titi (Crispy Noodle with Thick Sauce) with chili sauce and lime.
