noodle recipe:
100 grams pumpkin,steamed, mashed
250 grams high-gluten flour
50 grams sago starch
2 teaspoons salt
1 egg, beaten
25 ml iced water
2,000 ml waterfor boiling noodle
1 tablespoon cooking oilfor boiling noodle
1 teaspoon saltfor boiling noodle
25 grams sago starchfor coating noodle
meat topping ingredients:
150 grams ground beef
2 beef sausage, diced
1/2 onion, finely chopped
3 cloves garlic,finely chopped
1 tablespoon sweet soy sauce
1 tablespoon tomato sauce
1 tablespoon oyster sauce
3/4 teaspoon salt
1/4 teaspoon sugar
1/2 teaspoon sesame oil
100 ml water
1 tablespoon cooking oil
broth ingredients:
1.750 ml beef stock
3 cloves garlic,fried, crushed
1 scallion
4 teaspoon salt
1/2 tablespoon granulated sugar
1/2 teaspoon white pepper powder
- Noodle: mix well pumpkin, flour, sago starch, and salt. Add eggs and iced water gradually into flour mixture while kneading it into dough. Let it set for 15 minutes.
- Roll out dough in noodles machine from thickness numbers 1 (the thickest) to thickness number 5 (the thinnest) into fine noodle. Sprinkle it with sago starch. Cut with noodle cutter.
- Boil in the mixture of water, cooking oil, and salt. Drain it.
- Topping: heat cooking oil on the pan. Sauté onion and garlic until fragrant. Add in ground beef and sausage. Stir until the beef is no longer red. Add sweet soy sauce, ketchup, oyster sauce, salt, pepper, and sugar. Stir well. Pour in water. Stir it until all ingredients are well-cooked and become thick mixture. Add sesame oil slightly before removing it from heat. Stir it well quickly. Remove from heat.
- Put pumpkin noodle with meat topping on top of it in a bowl. Serve immediately.
