Chicken Feet Noodles
Ingredients
5 rolls curly noodles,boiled, drained
300 grams choy sum,boiled, cut into pieces
5 scallion, sliced,for garnish
seasonings per pack
5 teaspoons chicken oil(made of pan-heated chicken skin)
2 1/2 teaspoons light soy sauce
chicken stir-fry ingredients
16 pairs chicken feet,crushed
150 grams chicken thigh fillets,diced
3 cloves garlic,finely chopped
1/2 onion, coarsely chopped
75 grams mushroom,halved
2 tablespoons oyster sauce
1 tablespoon sweet soy sauce
1/4 teaspoon white pepper powder
400 ml water
1 tablespoon cooking oil

1,500 ml chicken broth(from boiled chicken feet)
4 cloves garlic,fried, smashed
1 tablespoon salt
1/4 teaspoon white pepper powder
1/2 teaspoon chicken bouillon powder
Cooking Steps
- Chicken stir-fry: Bring water to boil. Add chicken feet and cook it. Add 1 teaspoon salt and 3 cm ginger. Cook it until the chicken feet is soft and the liquid is oily. Remove it from heat. Reduce the broth into 1500 ml.
- Heat cooking oil on the pan. Sauté garlic and onion until fragrant. Add in chicken. Stir until the color changes. Add mushroom. Stir well. Add chicken feet, oyster sauce, soy sauce, and white pepper. Stir well.
- Pour water gradually into the chicken mixture . Cook until the mixture is soft and creamy. Remove from heat and set aside.
- Soup: Boil all soup ingredients until fragrant.
- In a bowl, stir curly noodle rolls with 1 teaspoon oil chicken oil and 1/2 teaspoon soy sauce. Add chicken stir-fry, choy sum, and scallion. Drench with soup.
- Chicken Feet Noodles are ready to serve.
