Mi Gomak (North Sumateranese Noodle Soup)
Ingredients
300 grams stick noodles,boiled
1 1/4 teaspoons salt
1 1/4 teaspoons sugar
200 ml coconut milkfrom 1/2 coconut
50 grams grated coconut,toasted, mashed
vegetable oil for frying
ground spices blend:
5 red chili peppers
1 red bird’s eyechili pepper
4 cloves shallot
1 clove garlic
1 teaspoon white pepper powder
2 cm galangal
1 stalk lemongrass
1 cm turmeric
2 teaspoons szechuan pepper
complements:
5 teaspoons crispy shallot
5 pieces fried red crackers,crushed with hand
3 duck eggs, hard-boiled
Cooking Steps
- Heat cooking oil. Sauté ground spices blend until fragrant.
- Add in coconut milk and toasted coconut. Stir well.
- Add salt and sugar. Stir until cooked and slightly thickened.
- Put noodle in a dish. Drench sauce over noodles.
- Serve Mi Gomak (North Sumateranese Noodle Soup) with crispy shallot, eggs, and crackers.
