Palembangnese Spicy Beef Ribs Pindang Soup
Ingredients
500 grams beef ribs
200 grams beef,cut into pieces
6 red bird’s eye chili peppers
2 salam (indonesian bay)leaves
2 cm galangal,smashed
2 lemongrass (white part only),smashed
2 tomatoes, cut into pieces
1 teaspoon sweet soy sauce
1/2 tablespoon salt
1 teaspoon sugar
2 tablespoons tamarind juice
1,500 ml water
2 tablespoons cooking oilfor sautéing
ground spices blend:
7 cloves shallot
2 cloves garlic
2 curly red chili peppers
2 cm turmeric,toasted
2 cm ginger
Cooking Steps
- Boil beef rib and meat until tender. Remove from heat. Separate it from the broth and set it aside.
- Reduce the broth to 1000 ml and bring it to boil. Add in ribs and meat. Cook it until boiling.
- Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, galangal and lemongrass until fragrant.
- Add bird’s eye chili pepper. Stir well.
- Pour it into the soup. Add tomato, sweet soy sauce, salt, and sugar. Cook it until well done.
- Remove it from heat. Add in tamarind juice. Stir it well.
