Grilled Chicken with Spicy Shallot Soy Sauce
Ingredients
1 chicken, butterflied
1 teaspoon lime juice
2 salam (indonesian bay)leaves
2 cm ginger,crushed
2 lemongrass (white part only),crushed
1 tablespoon salt
2 teaspoons brown palm sugar,chopped
¼ teaspoon white pepper powder
2 tablespoons cooking oilfor sautéing
ground spices blend:
½ tablespoon coriander seeds
10 cloves shallot
2 cloves garlic
2 candlenuts
glazing ingredients (mixed):
3 tablespoons sweet soy sauce
1 teaspoon cooking oil
spicy soy sauce (mixed):
100 ml sweet soy sauce
12 cloves shallot,finely sliced
2 teaspoons lime juice
1 tomato, cut into pieces
8 bird’s eye chili peppers
Cooking Steps
- Drizzle chicken with lime juice, set aside.
- Heat cooking oil. Saute ground spices blend, salam leaves, ginger, and galangal until fragrant.
- Add in chicken. Stir until the color changes. Add in water, salt, brown sugar, and pepper powder. Cook until the liquid is absorbed into the chicken.
- Grill chicken until browned and well-cooked. Glaze it with glazing ingredients while grilling.
- Put chicken on a plate. Drench it with spicy shallot soy sauce.
