Candlenut Grilled Chicken
Ingredients
1 whole chicken, butterflied
1 teaspoon lime juice
1 lemongrass (white part only),crushed
2 salam (indonesian bay)leaves
2 lime leaves
2 tablespoons sweet soy sauce
2 teaspoons salt
1 teaspoon sugar
2 teaspoons white pepper powder
400 ml water
2 tablespoons margarinefor frying
ground spices blend:
3 curly red chili peppers
8 candlenut, toasted
12 cloves shallot
8 cloves garlic
2 cm ginger
1 tomato
Cooking Steps
- Marinate chicken with lime juice. Let it set for 10 minutes.
- Heat margarine on the pan. Sauté ground spices blend, lemongrass, salam leaves and lime leaves until fragrant.
- Add chicken. Stir it until the color changes.
- Add sweet soy sauce, salt, sugar and pepper. Stir it until the chicken is coated in sauce. Pour in water. Cook chicken until tender and the liquid is absorbed into chicken. Remove from heat.
- Grill it over charcoal fire until it is fragrant and browned. Remove it from heat.
- Candlenut Grilled Chicken is ready to serve.
