Ayam Bakar Padang (Padangnese Grilled Chicken)
Ingredients
1 whole chicken,cut into 4 pieces
1 teaspoon lime juicefor marinating
1 teaspoon saltfor marinating
4 cloves garlic,thinly sliced
5 cloves shallot,thinly sliced
2 lemongrass (white part only),crushed
600 ml coconut milkfrom the second press of 1 coconut
1 teaspoon salt
1/4 teaspoon sugar
3 asam kandis (can be substituted with 2 cups tamarind juice)
200 ml coconut creamfrom the first press of 1 coconut
2 tablespoons cooking oilfor sautéing
ground spices blend:
5 curly red chili peppers
5 large red chili peppers
5 candlenuts, toasted
3 cm ginger
2 cm turmeric,toasted
1/4 teaspoon white pepper powder
Cooking Steps
- Marinate chicken with lime juice and salt. Let it set for 15 minutes.
- Heat cooking oil on the pan. Sauté ground spices blend, garlic, shallot and lemongrass until fragrant. Add in chicken. Cook it until it changes color.
- Add coconut milk, salt, sugar, and asam kandis. Cook it until boiling. Pour in coconut cream. Continuously stir it gently until the chicken is cooked and the liquid is absorbed into chicken.
- Grill chicken on a grilling pan until until it is well-done and browned. Remove it from heat.
