Ginger Grilled Chicken
Ingredients
1 chicken, cut into 8 pieces
1 teaspoon tamarind juice
1½ teaspoons salt
2 salam (indonesian bay)leaves
1 cm galangal,crushed
1 lemongrass (white part only),crushed, sliced
4 cm ginger,grated
2 tablespoons sweet soy sauce
¼ teaspoon chopped brown palm sugar
500 ml water
2 tablespoons cooking oilfor sauteing
ground spices blend:
3 cloves garlic
6 cloves shallot
3 candlenuts, toasted
½ teaspoon coriander seeds
¼ teaspoon white peppercorn
Cooking Steps
- Marinate chicken with tamarind juice and salt.
- Heat cooking oil on the pan. Sauté ground spices blend, salam leaves, galangal, lemongrass, and ginger until fragrant.
- Add in chicken. Stir until it changes color. Add sweet soy sauce, salt, and brown sugar. Stir well.
- Pour in water. Cook until the liquid is reduced and absorbed into the chicken.
- Grill chicken until browned and fragrant. Keep glazing it with the remaining sauce while grilling it. Remove from heat.
- Ginger Grilled Chicken is ready to serve.
