Sambal Lime Grilled Chicken
Ingredients
1 chicken, cut into 8 pieces
1 teaspoon salt
1 teaspoon jeruk limau (sambal lime) juice
2 salam (indonesian bay)leaves
2 lemongrass stalks, crushed
300 ml coconut water
ground spices blend:
4 cloves garlic
8 cloves shallot
3 candlenuts, toasted
½ teaspoon coriander seeds
¼ teaspoon white pepper powder
3 cm ginger
3 lime leaves, midribs removed
2 teaspoons salt
1 tablespoon brown sugar
glaze ingredients (mixed):
1½ tablespoons sweet soy sauce
1 teaspoon melted margarine
1 teaspoon jeruk limau (sambal lime) juice
2 teaspoons chicken braising sauce
Cooking Steps
- Marinate chicken with salt and sambal lime juice. Let it set for 20 minutes.
- Heat cooking oil on the pan. Saute salam leaves, lemongrass, coconut water, and ground spices blend. Add in chicken. Stir well. Cook it over low heat until the chicken is well done while the liquid is reduced and absorbed into the chicken. Remove it from heat.
- Grill chicken until browned and fragrant. Keep glazing it with glazing sauce while grilling it. Turn chicken over occasionally while grilling to help it cooked evenly.
- Remove it from heat. Sambal Lime Grilled Chicken is ready to serve.
