Sayur Asem Jakarta (Sour Vegetable Soup)
Ingredients
150 grams beef tetelan (meat, fat, and tendon scraped from beef bone)
2 salam (indonesian bay)leaves
2 cm galangal,crushed
50 grams paddy oat
50 grams peanuts,boiled, coarsely ground
150 grams young jackfruit,cut into chunks
1 sweet corn, cut into chunks
50 grams young papaya,cut into chunks
100 grams chayote squash,cut into chunks
20 grams tamarinddissolved in 4 tablespoons water
1 1/2 tablespoons salt
1/2 tablespoon sugar
20 grams paddy oat leaves
5 yardlong beans, cut into chunks
2,500 ml water
ground spices blend:
6 cloves shallot
4 cloves garlic
1 1/2 teaspoons terasi (shrimp paste),toasted
5 candlenuts, toasted
Cooking Steps
- Bring water and tetelan to boil. Add salam leaves, galangal, and ground spices blend. Cook until fragrant.
- Add melinjo, peanuts, jackfruit, and sweet corn. Cook until slightly cooked.
- Add young papaya, chayote squash, tamarind water, salt, and sugar. Cook until boiling. Add melinjo leaves and yardlong beans. Cook until done. Remove it from heat.
- Sayur Asem Jakarta (Sour Vegetable Soup) is ready to serve.
