Green Chili Shredded Beef
Ingredients
400 grams beef shank
2 lime leaves, midribs removed
3 salam (indonesia bay)leaves
1¾ teaspoon salt
1 tablespoon tamarind juice
2 cm galangal,crushed
2 lemongrass, crushed
4 large green chili peppers,deseeded, finely sliced
½ tablespoon sweet soy sauce
¼ teaspoon white pepper powder
1 teaspoon brown palm sugar,chopped
950 ml water
2 tablespoons cooking oilfor sautéing
ground spices blend
5 large green chili peppers
3 curly green chili peppers
6 cloves shallot
3 cloves garlic
½ teaspoon terasi (shrimp paste),fried
Cooking Steps
- Bring 750 ml water to boil. Cook beef shank along with 2 salam leaves, 1 teaspoon salt, and lime leaves until it is well done. Remove it from heat.
- Slice beef along the grain. Shred it. Fry it until it is slightly dried. Drain it.
- Saute ground spice blend, 1 salam leaf, galangal, and lemongrass until fragrant. Add green chili pepper. Stir well. Add in shredded meat. Stir well.
- Add sweet soy sauce, ¾ teaspoon salt, pepper, and brown sugar. Stir well. Pour in the rest of the water gradually while cooking it. Stir it until the liquid is absorbed into the meat. Remove from heat.
- Green Chili Shredded Beef is ready to serve.
