Crushed Fried Beef

  • In a special occasion like holy festival, we have always been busy with dish we have to serve from the appetizer to the dessert. besides one-dish meals, we often cook usual main dishes as we serve in daily basis such as rice and rice cakes. they absolutely require festive side dishes. this crushed fried beef can be a right choice!

    500 grams silverside beef
    1,000 ml water
    2 lemongrass (white part only),crushed
    3 salam (indonesian bay)leaves
    2 lime leaves, midribs removed
    1 cm galangal,crushed
    750 ml coconut milkfrom ½ coconut
    1 tablespoon tamarindfrom 1 teaspoon tamarind dissolved in 1 tablespoon water
    cooking oil for frying

    ground spices blend:
    10 cloves shallot
    3 cloves garlic
    2 teaspoons coriander seeds
    50 grams brown sugar
    2 teaspoons salt

    Cooking Steps

    1. Bring water to boil. Add the whole beef. Cook it until it is ¾ done.
    2. Remove it from the broth and cut it widely along the grain. Crush it. 
    3. Reduce the broth into 500 ml. Set aside.
    4. Bring the mixture of beef broth and coconut milk. Add beef, ground spices blend, lemongrass, salam leaves, lime leaves, and galangal.
    5. Add in tamarind juice. Boil beef it is tender while the sauce is reduced and infused to the beef. Remove from heat and let it cooled. Crush it gently with meat mallet or pestle.
    6. Fry beef over medium heat until it is browned. Remove from heat.
    7. Crushed Fried Beef is ready to serve.
