350 grams beef shank
2 salam (indonesian bay)leaves
2 cm ginger,crushed
1,000 ml water
cooking oil for sautéing
dipping ingredients (mixed):
6 cloves garlic,coarsely ground
2 candlenuts, toasted
1 teaspoon coriander seedspowder
½ teaspoon salt
¼ teaspoon white pepper powder
200 ml water
