    Ingredients

    400 grams beef shank
    2 salam (indonesian bay)leaves
    1,000 ml water
    3 large red chili peppers,sliced diagonally, deseeded
    5 lemongrass (white part only),sliced diagonally
    2 cm galangal,crushed
    2½ teaspoons salt
    ½ teaspoon white pepper powder
    1 teaspoon white sugar
    1 tablespoon tamarind juicefrom ½ teaspoon tamarind dissolved in 2 teaspoon water
    300 ml coconut milkfrom 1 coconut
    2 tablespoons cooking oilfor sautéing

    ground spices blend:
    8 cloves shallot
    4 cloves garlic
    3 curly red chili peppers
    ½ teaspoon terasi (shrimp paste),fried
    2 cm turmeric,toasted
    1 teaspoon coriander seeds
    1 cm ginger
    3 candlenuts, toasted

    Cooking Steps

    1. Bring water to boil. Add beef and salam leaves. Boil it until the beef is well done. Remove beef from heat and reduce the broth to 500 ml. Cut beef against the grain.
    2. Bring beef broth to boil. Add the sliced beef. Continue boiling the beef in its broth.
    3. Heat cooking oil on the pan. Sauté ground spices blend, large red chili pepper, lemongrass, and galangal until fragrant.
    4. Pour it into the beef soup. Cook it until the liquid is reduced and infused to the solid ingredients.
    5. Pour in coconut milk, salt, pepper, and sugar. Cook it until the liquid is thickened. Add tamarind juice. Stir well. Remove it from heat.
    6. Beef with Lemongrass Sauce is ready to serve.
