    Ingredients

    300 grams potato,thinly sliced
    ½ teaspoon limewater
    75 grams beef jerky,julienned, fried quickly, drained
    cooking oil for frying

    chili balado ingredients:
    5 large red chili peppers,finely sliced, deseeded, fried until dry
    1 salam (indonesian bay)leaf
    2 cm galangal,crushed
    2 teaspoons salt
    60 grams sugar
    3 tablespoons cooking oilfor sautéing

    ground spices blend:
    15 cloves shallot
    5 cloves garlic
    2 tablespoons ebi (dried shrimp),soaked in hot water
    8 curly red chili peppers
    2 large red chili peppers

    Cooking Steps

    1. Marinate potato in limewater for 15 minutes, drain it. Fry it until cooked and crunchy.
    2. Heat cooking oil. Sauté ground spices blend, salam leaves, and galangal until fragrant.
    3. Add salt and sugar. Stir it until thickened and stringy. 
    4. Add potato, jerky, and chili pepper. Stir it until potato and jerky are coated with the spices. Remove from heat. (yields 400 grams)
    5. Dendeng Kentang Balado (Spicy Potato & Jerky Chips) is ready to serve.
