Oxtail Soup
Ingredients
700 grams oxtail
3,000 ml water
200 grams carrot,coined thickly
200 grams potato,cubed
½ teaspoon nutmeg powder
3 cm cinnamon
3 cloves
2½ tablespoons salt
1 teaspoon sugar
2 scallions, chopped into 1 cm pieces
2 tablespoons cooking oilfor sautéing
ground spices blend:
6 cloves shallot
5 cloves garlic
1 teaspoon white peppercorn
complements:
100 grams fried paddy oat chips
2 tablespoons crispy shallot
1 red tomato, chopped
Cooking Steps
- Boil oxtail in a pressure cooker until tender. Remove it from broth. Strain the broth and reduce it into 2,500 ml.
- Bring broth to boil. Add oxtail.
- Heat cooking oil on the pan. Sauté ground spices blend, nutmeg powder, cinnamon, and cloves until fragrant. Pour it into the oxtail soup. Add salt and sugar. Cook until boiling.
- Add in carrots and potato. Cook until softened. Add scallion. Stir well. Remove from heat.
- Serve Oxtail Soup with its complements.
