    Ingredients

    fried beef ingredients:
    500 grams beef shank
    2,500 ml water
    1 salam (indonesian bay)leaf
    2 lemongrass, crushed
    3 lime leaves, midribs removed
    75 grams brown palm sugar
    200 ml coconut water
    100 ml coconut milkfrom ¼ coconut
    1 teaspoon salt
    2 teaspoons tamarind juice
    cooking oil for sautéing

    ground spices blend:
    5 cloves shallot
    2 cloves garlic
    3 candlenuts, toasted
    1 tablespoon coriander seeds

    soup ingredients:
    1,500 ml beef stock
    3 cloves garlic,fried, crushed
    1 cm cinnamon
    2½ teaspoons salt
    ½ teaspoon white pepper powder
    ½ teaspoon sugar
    1 teaspoon nutmeg powder
    100 grams carrot,coined
    100 grams potato,cubed
    100 grams cabbage,cut into small pieces
    2 scallions, cut into 1 cm pieces
    50 grams glass noodles,soaked in hot water
    1 block beef bouillon powder

    complements:
    crispy shallot
    celery
    fried paddy oat crackers

    Cooking Steps

    1. Fried Beef: boil beef until medium-cooked. Remove beef from broth and slice it widely with ½ cm thickness. Crush it until flattened and widened. Set aside. Strain the broth and divide it into two batch. Add water to first batch into 1,500 ml broth and second batch to 700 ml broth.
    2. Add ground spices blend, salam leaf, lemongrass, lime leaves, salt, and tamarind juice into the 700 ml broth. Add in coconut water and coconut milk. Cook over low heat until the beef is well done while the liquid is reduced and absorbed into the beef. Remove beef from broth and drain it. Set aside.
    3. Heat cooking oil on the pan. Fry beef quickly. Set it aside.
    4. Soup: bring 1,500 ml broth to boil. Add garlic, cinnamon, clove, salt, sugar, nutmeg powder, and beef bouillon powder. Cook them until boiling and fragrant.
    5. Add potato, carrot, cabbage, scallion, and glass noodles. Stir well. Cook until all ingredients are well-cooked. Remove from heat. Serve with white rice and its complements.
    6. Sop Empal (Fried Beef with Vegetable Soup) is ready to serve.
