Beef feet soup is a traditional dish from east java. however, you don’t need to go there if you want to enjoy this dish. if you can make it, you can eat it at home straight from your kitchen.
Beef Feet Soup
Ingredients
750 grams beef feet
2 salam (indonesian bay)leaves
2 cm galangal,crushed
2 cm ginger,crushed
2 lemongrass stalks (white parts only),crushed
1 tablespoon salt
2 teaspoons sugar
2,200 ml water
2 scallions, cut into 1 cm pieces
3 tablespoons cooking oilfor sautéing
limes for complements
ground spices blend:
14 cloves shallot
6 cloves garlic
5 candlenuts, toasted
1 teaspoon white peppercorn
2 cm turmeric,toasted
½ teaspoon cumin
Cooking Steps
- Boil beef feet, salam leaves, galangal, ginger, 1 lemongrass, and salt in 1,000 ml water until well-cooked. Remove beef feet from liquid, cut it into pieces, and discard the liquid. Set aside.
- Sauté ground spices blend and 1 lemongrass until fragrant. Add beef feet. Stir well.
- Pour in 1,200 ml water. Add in salt and sugar. Cook them until all ingredients are well-cooked. Slightly before removing it from heat, add in scallion. Stir well. Remove it from heat.
- Beef Feet Soup is ready to serve.
