Sate Ayam Madura (Maduranese Chicken Satay)
Ingredients
4 pairs chicken legs and thigh,filleted, skin removed
4 tablespoons sweet soy sauce
2 teaspoons cooking oil
21 skewers
peanut sambal ingredients:
150 grams peanut,fried, ground
5 curly red chili peppers,fried
2 candlenuts, fried
2 large red chili peppers,fried
2 teaspoons brown palm sugar,finely chopped
1 teaspoon salt
350 ml hot water
sides:
3 lontong (long rice cakes in banana leaf)
2 tablespoons sweet soy sauce
3 jeruk limau (sambal limes)
1 tablespoon crispy shallotfor topping
sambal (blended into smooth paste):
8 red bird’s eye chili peppers,boiled
5 curly red chili peppers,boiled
50 ml water
½ teaspoon salt
½ teaspoon sugar
Cooking Steps
- Peanut sambal: grind peanut sauce, curly red chili pepper, large red chili pepper, candlenuts, brown sugar, and salt. Pour in water. Boil it until cooked and thickened.
- Take 100 grams of peanut sambal, sweet soy sauce, and cooking oil. Mix it well. Dip chicken in it. Skewer them.
- Grill it until half-cooked. Coat it with peanut sambal. Grill it until well-cooked.
- Sambal: blend chili pepper and water. Add in salt and sugar. Stir it well.
- Put satay on a plate. Drench it with peanut sambal. Serve with its sides and sambal. (yields 21 skewers)
