Despite the simplicity of beef and coconut mixture, sate klopo (coconut beef satay) is a marvelous dish. this dish also tastes good when served with rice cakes.
satay ingredients:
300 grams beef tenderloin,cut into bite-sized chunks
100 grams beef fat,cut into bite-sized chunks
1 teaspoon salt
½ teaspoon white pepper powder
spiced coconut ingredient:
200 grams coarsely gratedcoconut
ground spices blend for coconut:
4 cloves shallot
2 cloves garlic
2 cm turmeric,toasted
½ teaspoon coriander seedspowder
½ teaspoon sugar
peanut sauce ingredients:
100 grams peanut,fried, ground
2 curly red chili peppers,ground
2 red bird’s eye chili peppers,ground
25 grams brown palm sugar,finely chopped
½ teaspoon salt
300 ml warm water
sides:
5 portions white riceor rice cakes
100 grams coarsely grated coconut,toasted, ground
5 cloves shallot,finely sliced
2 tablespoons sweet soy sauce
- Marinate beef with salt and pepper. Let it set for 1 hour inside a refrigerator.
- Skewer the beef along with its fat.
- Spiced coconut: mix well coconut with its ground spices blend.
- Coat satay with spiced coconut.
- Grill it until browned and fragrant. Remove from heat.
- Peanut sauce: blend all ingredients into fine mixture.
- Serve satay with peanut sauce and its sides.
- Sate Klopo (Coconut Beef Satay) is ready to serve. (yields 25 skewers)
