Islamic holy festival is not completed without this ayam bumbu gulai (chicken with red curry). it has been a signature dish of islamic holy festival in indonesia for uncountable years.
1 whole chicken,cut into 8 parts
1 pack instant gulaispice paste
2 cloves shallot,finely sliced
1 cloves garlic,finely sliced
2 large red chili peppers,sliced diagonally
2 large green chili peppers,sliced diagonally
1 tomato, cut into pieces
700 ml coconut milkfrom ½ coconut
2 tablespoons cooking oilfor sautéing
cooking oil for frying
1. Mix chicken, gulai paste, and 200 ml coconut milk. Cook it until the chicken is well done while the liquid is reduced and absorbed into the chicken. Remove chicken from the liquid and set aside the sauce.
2. Fry chicken over medium heat until it is golden brown. Set it aside.
3. Sauté shallot, garlic, red chili peppers, green chili peppers, and tomato until fragrant.
4. Pour in the rest of gulai sauce and coconut milk. Cook it until boiling.
5. Add fried chicken. Cook it until the chicken is well done while the liquid is reduced and absorbed into the meat. Remove it from heat.
6. Ayam Bumbu Gulai (Chicken with Red Curry) is ready to serve.
