Gulai Nangka (Yellow Jackfruit Curry)
Ingredients
300 grams young jackfruit,cut into cubes, boiled
100 grams cabbage,cut into small pieces
100 grams yardlong beans,cut into small sticks
1,500 ml coconut milkfrom 1 coconut
1 turmeric leaf, knotted
2 lemongrass (white parts only),crushed
2 asam kandis
5 lime leaves, midribs removed
ground spices blend:
10 cloves shallot
5 cloves garlic
4 cm turmeric,toasted
3 cm ginger
2 curly red chili peppers
2¾ teaspoons salt
¾ teaspoon white peppercorn
¾ teaspoon sugar
Cooking Steps
1. Boil the mixture of ground spices blend, coconut milk, turmeric leaf, lemongrasses, asam kandis, and lime leaves. Keep stirring it until it is bubbling.
2. Add in jackfruit, yardlong beans, and cabbage. Cook it until softened and well-cooked. Remove it from heat.
3. Gulai Nangka (Yellow Jackfruit Curry) is ready to serve.
