1 (900 grams) chicken,quartered
2 litres water
3 lemongrass, crushed
6 lime leaves, midribs removed
2 tablespoons salt
1 teaspoon white pepper powder
1 tablespoon sugar
3 tablespoons cooking oilfor sautéing
cooking oil for frying
ground spices blend:
10 cloves shallot
6 cloves garlic
2 cm ginger
4 cm turmeric,toasted
4 candlenuts, toasted

soto ingredients:
50 grams glass noodles,soaked in hot water, drained
2 tomatoes, cut into small pieces
3 hard-boiled eggs
100 grams mung bean sprouts
100 grams cabbage,finely sliced
complements:
2 tablespoons crispy shallot
2 celery, finely chopped
sambal ingredients:
12 red bird’s eye chili peppers
4 red chili peppers
3 cloves garlic
¼ teaspoon salt
1. Bring water to boil. Add chicken. Boil it until the chicken is well-done and the liquid is bubbling.
2. Heat cooking oil on the pan. Sauté ground spices blend, lemongrass, and lime leaves until fragrant. Pour it into the chicken soup.
3. Add in salt, pepper, and sugar. Cook it until all ingredients are well done. Remove it from heat and take the chicken.
4. Fry chicken over medium heat until it is golden brown. Shred it.
5. Sambal: boil bird’s eye chili peppers, red chili pepper, and garlic until all ingredients are softened. Remove it from heat. Add salt. Grind it.
6. Put chicken and soto ingredients in a bowl. Drench it with the soup.
