    Ingredients

    600 grams beef thigh
    2 cloves garlic,ground
    ½ tablespoon coriander seedspowder
    2 teaspoons salt
    1 teaspoon sugar
    1,500 ml water
    2 salam (indonesian bay)leaves
    4 lime leaves, midribs removed
    2 cardamoms
    1 star anise
    2 cloves
    ¼ teaspoon nutmeg powder
    2 lemongrass (white parts only),crushed
    1 teaspoon salt
    2 tablespoons cooking oilfor sautéing

    ground spices blend:
    1 large red chili pepper
    10 cloves shallot
    4 cloves garlic
    2 cm turmeric,toasted
    1 cm galangal
    1 teaspoon white peppercorn

    complements:
    100 grams glass noodles,soaked in hot water
    1 scallion, sliced
    6 potato perkedel (frikkadel)
    2 celery, sliced
    3 tomatoes
    100 grams red crackers
    2 limes

    Cooking Steps

    1. Boil beef, garlic, coriander seeds powder, salt, sugar, and water until the beef is tender. Remove it from heat. Divide beef into two parts.
    2. Cube one part of beef. Set it aside. Slice one part of the beef thinly.
    3. Fry the thinly sliced beef until dried. Set it aside.
    4. Reduce the beef broth into 1,500 ml. Add in cubed beef into the broth. Bring it to boil.
    5. Heat cooking oil. Sauté ground spices blend, salam leaves, lime leaves, cardamoms, star anise, cloves, nutmeg powder, and lemongrass until fragrant.
    6. Pour it into the beef soup. Add salt. Cook it until all ingredients are well done.
    7. Soto Padang (Spiced Beef Soup) is ready to serve with its complements and the crispy beef.
