Es dawet (iced sago jelly) is a traditional cold drink from indonesia. sold every day for quenching your thirst in many street food stalls, this beverage is even more popular in ramadhan for breaking the fast. the combination of brown sugar syrup with fragrant jackfruit and savory coconut milk results in a delightful treat everyone loves.
dawet (sago jelly) ingredients:
50 grams sago starch
60 grams rice flour
600 ml water
1½ teaspoons salt
500 grams coarsely shaved ice
palm sugar syrup ingredients:
250 grams brown palm sugar,finely chopped
2 pandan leaves
250 ml water
¼ teaspoon salt
6 pieces jackfruit,sliced lengthwise
coconut milk mixture ingredients:
500 ml coconut milkfrom ½ coconut
2 pandan leaves
1. Dawet: dissolve rice flour, sago starch, and salt in the water. Cook it and keep stirring it until the mixture is bubbling, thickened, and elastic.
2. Pour it into a dawet mould (strainer with larger holes and a press tool). Press it into iced water. Strain it. Set aside.
3. Syrup: boil brown sugar, water, pandan leaves, and salt over low heat until thickened. Add jackfruit. Stir it well.
4. Coconut milk mixture: boil all the ingredients. Keep stirring it until the mixture is boiling.
5. Put dawet in a glass. Drizzle it with syrup. Pour in coconut milk mixture. Add in shaved ice.
6. Es Dawet (Iced Sago Jelly) is ready to serve.
