Usually, klepon (pandan rice balls with brown sugar) is green-colored. however, this time we make klepon ubi ungu (sweet potato & brown sugar balls) which has beautiful and vibrant purple color. it also tastes richer than your usual klepon. let’s try to cook it!
200 grams steamed purple sweet potato,mashed
125 grams white glutinousrice flour
¼ teaspoon salt
½ teaspoon limewater
75 ml warm coconut waterfrom ¼ coconut
banana leaves, folded into small bowl
fillings:
75 grams brown sugar,chopped
coating (steamed):
100 grams coarsely grated coconut
1 pandan leaf
¼ teaspoon salt
1. Mix well purple sweet potato, white glutinous rice flour, and salt. Add in limewater and warm coconut milk gradually. Keep kneading it into elastic dough.
2. Take a little dough. Flatten it. Spoon the filling on top of it. Wrap it and form it into balls.
3. Boil it until klepon rises to the surface. Drain it.
4. Roll it on the steamed coating ingredients.
5. Klepon Ubi Ungu (Sweet Potato & Brown Sugar Balls) is ready to serve. (yields 36 pieces)
