Serabi oncom (coconut pancake with soybean pulp) is so popular in ramadan month. with oncom (fermented soybean pulp), this coconut milk pancake tastes so delicious. let’s serve it for your family as a breaking the fast menu.
200 grams all-purpose flour
½ teaspoon salt
1 egg, loosely beaten
600 ml coconut milkfrom ½ coconut
1¼ teaspoons baking powder
filling ingredients:
150 grams oncom (fermented soybean pulp),toasted, coarsely chopped
2 lime leaves, midribs removed
1 salam (indonesian bay)leaf
1¼ teaspoons salt
½ teaspoon sugar
150 ml water
4 sprigs lemon basil leaves
2 tablespoons cooking oilfor sautéing
ground spices blend:
6 cloves shallot
3 cloves garlic
2 large red chili peppers
3 curly red chili peppers
1. Filling: heat cooking oil on the pan. Sauté ground spices blend, lime leaves, and salam leaf until fragrant. Add in oncom. Stir it well.
2. Add salt, sugar, and water. Stir it well. Add in lemon basil leaves. Cook it until all ingredients are softened and well-mixed. Set it aside.
3. Heat clay pan with grated coconut inside it. Stir it until oily. Discard the coconut and heat it for 5 minutes with medium heat.
4. Boil coconut milk and keep stirring it until boiling. Reduce the coconut milk to 500 ml. Let it warm.
5. Stir well all-purpose flour, salt, and egg. Pour in coconut milk gradually and mix it with low speed for 20 minutes. Let it rest for 30 minutes. Add in baking powder. Stir it well.
6. Pour in one ladle of mixture in the clay pan over high heat. Let it bubbling. Lower the heat. Spoon in stir-fried oncom. Close the lid and let it cooked. Remove it from heat.
7. Serabi Oncom (Coconut Pancake with Soybean Pulp) is ready to serve.
