When bored with your usual egg or cereal for breakfast, you can serve nasi pecel (rice with vegetables and peanut sauce). rice served with boiled vegetables and drenched with peanut sauce tastes even better with a piece of peyek (peanut cracker) or empal (braised and fried savory beef).
2 bunches spinach (leaves and young stems only),boiled, drained
5 yardlong beans, cut into 3 cm pieces,boiled, drained
100 grams mung bean sprouts,boiled, drained
50 grams white leadtree seeds
peanut sauce:
250 grams peanut,fried
1 tablespoon tamarind juicefrom 1 teaspoon tamarind dissolved in 2 tablespoons water
450 ml hot water
ground spices blend for peanut sauce:
4 curly red chili peppers,boiled
6 red bird’s eye chili peppers,boiled
6 lime leaves, midribs removed
4 cm sand ginger
4 cloves garlic,fried
1 teaspoon terasi (shrimp paste),fried
½ tablespoon salt
75 grams brown palm sugar,finely chopped
sides:
white rice
5 rempeyek kacang(peanut crackers)
1. Peanut sauce: grind peanut along with the ground spices blend. Add tamarind juice and hot water. Mix it into paste.
2. Put rice on a plate. Put spinach, yardlong beans, and mung bean sprouts on the side of the rice. Drench vegetables with peanut sauce. Sprinkle it with white leadtree seeds.
3. Nasi Pecel (Rice with Vegetables and Peanut Sauce) is ready to serve with rempeyek kacang.
